PEPPER JELLY

1 c. bell pepper, finely chopped

1/4 c. hot red pepper

1 1/2 c. apple cider vinegar

6 1/2 c. sugar

1 (6oz.) bottle Certo or Pectin

Several drops of red or green food coloring

Mix peppers, vinegar and sugar.  Bring to a rolling boil and cook 7 minutes.  Remove from heat and cool for 5 minutes.  Add Certo and food coloring.  Mix thoroughly.  Pour into jars and seal.  Delicious with any kind of meat or serve with cream cheese and crackers.
