MINIATURE CHEESECAKES

5 eggs

1 c. sugar

1/2 t. vanilla

2 c. sour cream

1/2 c. sugar

1 t. vanilla

3-8 oz. cream cheese softened

Strawberry or Blueberry preserves

Combine cream cheese, eggs, sugar, and vanilla, mixing well (be sure there are no lumps).  Fill baking cups (midget baking papers 1 3/4") 3/4 full and bake for 30-40 minutes at 300 degrees.  Do not brown.  Cool.  Combine sour cream, sugar, and vanilla.  Top each "miniature" with about 1 teaspoon mixture.  Bake at 300 degrees for 5 minutes.  Cool.  These freeze great!  To serve, remove from freezer and allow to reach room temperature.  Top with teaspoon of preserves at serving time.
