PINEAPPLE CHESS PIE

(Makes 2)

1 c. butter

6 eggs

3 c. sugar

2 t. vanilla

1 can crushed pineapple (drained)

Cream butter and sugar.  Add well beaten eggs.  Cook in double boiler for 15 minutes stirring constantly.  Add vanilla and drained pineapple.  Pour into slightly baked pie crust and cook in hot oven (450) for 10 minutes, then moderate oven (350) for 25-30 minutes.  Makes two pies in deep crust.  To slightly bake crust, put in oven (450) for about five minutes.
