OLD FASHIONED SPICE CAKE
1 can carnation evaporated milk
2 1/2 c. self-rising flour
1 c. granulated sugar
1 c. raisins
3/4 c. packed brown sugar
2/3 c. shortening
3/4 t. ground cinnamon
3/4 t. allspice
1/2 t. ground cloves
1/2 t. ground nutmeg
3 eggs
Heat oven to 350 degrees. Grease and flour pans. Beat 1-1/3 c. evaporated milk and the remaining ingredients for 30 seconds. Beat on high speed three minutes. Pour in pans and bake 40 to 45 minutes. Cool completely and frost with caramel frosting. Sprinkle with chopped nuts or nutmeg.
Caramel Frosting:
1 c. packed brown sugar
1/2 c. oleo or butter
1/3 c. evaporated milk
2 c. powdered sugar
Heat brown sugar, oleo and milk to boiling over medium heat. Boil and stir 2 minutes. Remove from heat and cool until slightly thickened. Gradually stir in powdered sugar. If necessary stir in 2 to 3 t. water until frosting is smooth. Spread on cake.
